Air-fried Spanish Mackerel with Spices and Rice

Kaffir lime leaves, remove stem and slice them |

2 pieces (300g) |
Mackerel fillet, cleaned |
1 piece |
Banana leaves, cleaned and soften |
1 piece |
Aluminum foil, 20-30cm long |
2 cups (200g) |
Cooked brown rice |
6 pieces (50g) |
Lettuce |
2 smalls |
Lime, optional |
Method:
- • Combine all ingredients A (blended ingredients, curry powder, turmeric power, tamarind paste, kaffir lime leaves and salt) in a bowl and mix well.
- • Cut and clean a piece of banana leaf around 8 inches. Place on an aluminum foil.
- • Preheat air-fryer in 200 degree celsius for 3 minutes.
- • Layer half of ingredients A on the banana leaf, put fish fillets and top with the rest of ingredients A
- • Fold the aluminum foil neatly and cook in the Air fryer with 200 degree celsius for 25 minutes.
- • Serve with cooked brown rice, lettuce and lime for extra taste.
- *Tips: Soften banana leaves by holding them directly on top of a burner, moving it slowly to heat until the whole leaf becomes glossy.
